Turkey Chorizo + Tomato Dinner Hash

One of my favourite places to shop for groceries in Victoria, BC is Rootcellar Market.
Several months back, they expanded to include a new deli with fresh local meat and the best turkey chorizo a few of my team members have ever had. I don't eat meat so I tend to substitute the turkey chorizo with veggie dogs when I make this recipe. I had to mention the the chorizo though, because so many people are raving about it.
I'm always on the lookout for recipes that are healthy but filling and easy to prepare. The busier this real estate market gets, the less time Greg and I have to prepare meals.
But I still want to eat well so focusing on fresh, local ingredients is key.
Rootcellar Market makes their own super affordable spices - including the above garlic flakes.
Their green onions are also absolutely delicious.
Start by sautéing both in a pan on medium heat with a little bit of extra virgin olive oil.
Next, remove the mixture from your element and set aside, focusing on your tasty tomatoes.
Cherry Tomato Heaven
I love tomatoes, but I really dislike the texture of tomato seeds.
It's a weird thing, I know.
I like to roast my tomatoes before adding them to this dinner hash.
It helps to create more flavour.
And during this time of year, tomatoes are just so beautiful.
Preheat your oven at 375 degrees and chop your cherry tomatoes in half. Lay them flat in an over-safe pan and drizzle them with extra virgin olive oil and garlic flakes.
You can also add paprika and chile flakes to create some heat.
And don't forget about the fresh sea salt.
Next, roast your tomatoes in the oven for approximately 20 minutes or until they are tender and juicy. Once you have removed them from the oven, mash them all up in the same pan, mixing the juices together to create a fresh sauce.
Chickpeas, Corn and Turkey Chorizo
There really are no rules with this recipe.
Like a breakfast hash, the more you throw together, the better it tastes.
You can add as many or as few vegetables as you want.
Red peppers, fresh zucchini and even cauliflower are all good options.
I like to throw in chickpeas for added protein and corn to contribute colour.
Combine your tomato mixture with the above ingredients and transfer everything to a wok on the stove. From there, let simmer and bubble until the veggies have softened.
One of my team members has been known to add bacon as well.
The Final Result
Once your dinner hash has mixed together and softened on the stove, you can chop up some fresh kale and mix it in with everything else.
I like to do this last because otherwise, the kale cooks too much and become too soft.
From there, you can cook some high-protein quinoa or brown rice, and top everything off with some freshly grated parmasean cheese.
