Easy Homemade Pakoras

These pakoras are delicious.
Like... OMG amazing. Not to mention, oh sooooo easy.
I was actually kind of shocked at just how easy they were to make.
We all know Fridays can often feel a little overwhelming in the dinner department.
You’re already exhausted from a busy week, and all you want to do is relax with that big glass of wine. I get it. In fact, it’s my very plan tonight.
That’s why I thought this recipe would be perfect for your next easy Friday night meal.
I’ve never really considered making homemade pakoras before, mostly because I always thought you could only deep-fry them.
These pakoras are baked in the oven, and they are surprisingly healthy!
You'll still get the same great taste and satisfaction.

These homemade pakoras are made exactly the way way you would make your favourite cookies.
You can add whatever fillings and ingredients you’d like.
They are just so flexible.
My favourite thing to add is peas, because once baked, they create just the right amount of crunch combined with beautiful spices.
Eat them alone or on your favourite salad. Add rice and avocado and you’re all set.
You can also make these pakoras early in the week and use them for lunches.
They keep in the fridge beautifully.
My Homemade Pakora Recipe
2 1/2 cups of chick pea flour
1 pinch of salt
1 tsp of baking powder
2 tsp garam masala
2 tsp of cumin
2 tsp of paprika
1 tsp turmeric
2 gloves of fresh garlic
1 cup of peas
1/3 cup of green onion
1/2 cup of chopped cauliflower
Preheat oven at 400 degrees.
In a large bowl, combine chick pea flower, salt, baking powder and spices. Use the back of a spoon or a garlic press to crush the cloves of garlic, and add garlic to dry ingredients.
Combine peas, green onion and cauliflower with dry ingredients and slowly add water until you’ve created a consistent paste - similar to cookie dough.
Your mixture should sit nicely in a clump - so make sure not to add too much water at once.
Spray cookie sheet or baking pan with your favourite oil to ensure your pakoras don’t stick t the pan after baking. Place your pakoras onto the pan exactly like you would do with your favourite cookie recipe.
Sprinkle cracked pepper and chilly flakes over your pakoras and place in oven.
Bake for ten minutes on one side, remove your pakoras from the oven and flip them with a spatula. Bake on following side for five to eight minutes or until your pakoras are nicely browned.
Remove from the oven and brush your favourite oil - I like to use olive oil in this case - over one side of your pakoras. Change your oven setting from bake to broil, and boil the oil side of your pakoras until they are golden and crispy.
Let cool and enjoy!
